Corned Beef Hash

Was browsing "ration book" recipes today and I stumbled across this gem at http://uktv.co.uk/yesterday/item/aid/633178. I had been craving corned beef, and even though I imagined ration food would be bad on principle, I decided to go for it.

Ingredients:

1 leek, chopped
1 can corned beef
1 can pork and beans
Worcestershire to taste
4 small potatoes or 2 large
1/2 cup grated cheese (I used havarti)

Directions:

1.) Cut up potatoes and set to boil. Chop leeks, and heat water in frying pan to lightly "sweat" the leeks.
2.) Fight with can of corned beef while leeks are sweating. Give up on their helpful little key thing and use can opener instead. Cube corned beef, add to leeks. Add can of pork and beans. Add a few dashes of Worcestershire to taste.Cook until mixture begins to smell nummy (technical term).

3) Remove leeks, beans, and beef from heat. Pour into casserole dish and set aside.
4) Finish cooking potatoes. Mash potatoes. Spread potatoes on top of corned beef mixture.
5) Sprinkle grated cheese on top of mashed potatoes
6) Toss in oven at 400 degrees for about half an hour. Broil for the last ten minutes.

7) Serve, enjoy. It didn't turn out gross at all for "ration" food (and a very cheap meal to make, indeed), though it was a little more hearty than what I've been used to since I left the farm, hah. Definitely good to make if you're on a tight budget and want something filling.
